Why does a condenser pick up more of the room?
It is more sensitive overall, so with the gain set for your voice everything else in the room arrives at a usable level too. A dynamic capsule needs you closer and the gain higher, which means distant sounds fall further behind your voice. The physics is about relative distance rather than about the microphone rejecting anything cleverly.
Can you fix a roomy recording afterwards?
Only partly. Noise reduction can remove steady background hum and hiss reasonably well. Reverberation from a bare room is far harder, because it is your own voice arriving late, and removing it tends to leave artefacts. It is much cheaper to hang a duvet behind you than to fix the recording that a bare wall produced.
Is a USB microphone a dead end?
It can be. The Yeti is USB only, so the day you want a real interface and a second microphone you start again. The MV7+ has an XLR output, so it carries forward. If you think this is a hobby that will grow, that difference is worth more than it looks on the day you buy.
What is the cheapest way to improve either?
Get closer, and put something soft behind you. Halving the distance to the microphone roughly doubles the level of your voice relative to the room, which is a bigger change than any purchase.
